VEGAN RADISH SPREAD


 

So easy!

Today I left the farmers market again with a basket full of fresh goods. I bought some apples, arugula, potatoes and various herbs. When I was just about to head back home, a bunch of radishes caught my attention. I haven’t had radishes in a long time now, so I picked a beautiful bunch of those cute looking pink little friends as well and went home happily. While I was walking down the streets I thought about what I could use the radishes for. As just putting them into a salad or on a slice of bread seemed a little boring to me I decided to make a radish spread out of them. And here is my recipe!

 

Make it vegan

I have to admit that making spreads is not one of the things I do on a regular basis. Due to that fact I looked up some general recipes for spreads but none of them really convinced me. Most of them mainly consisted of cream cheese. Boooooring. And not vegan by the way. Of course using (vegan) cream cheese would have been a simple option but I didn’t want to use any convenience products for my recipe. In the past I already ate spreads which contained sunflower seeds or nuts and as I still had some cashews left from making pesto the other day, I thought that they would make a good base for my spread. And so they did.

 

You need:

  • a bunch of radishes
  • 150 g cashews
  • 2-3 tbs olive oil
  • salt and pepper
  • 1 clove of garlic
  • herbs (optional)
  • a small amount of milk of your choice

Hocus-pocus:

Soak the cashews for about 20 minutes. Then drain them and cut the radishes and herbs. Blend everything with a hand-held blender or a food processor and add a little amount of milk to get a creamier texture. Her you go!
